This role is responsible for the operational delivery of the busy Sports Club Bar alongside planning and implementing a programme of outstanding events for club users and members of the local community.  In this hands-on position you will have responsibility for the daily operation of the bar, ordering and stock control, overseeing staffing levels, staff management and recruitment and have the skills to create a varied programme of activities designed to create a vibrant atmosphere at the Club for all visitors that encourages return visits and adds value to the memberships.

Summary of Main Duties

This role is central to providing an attractive bar area / service and delivering member events that drive retention at EGSC and can be summarised in 7 key areas of work:

  7. Event Management & Promotion

Service

  1. Ensure a high standard of bar service throughout the operating hours ensuring clean and attractive bar presentation standards are maintained
  2. Initiate sustainable systems in order to deliver quality service standards that result in excellent operations
  3. Ensure all Bar Staff adhere to uniform, PPE standards and project a smart and professional image
  4. Encourage all frontline personnel to deliver a strong customer service ethos through positive customer engagement
  5. Maintain a positive working relationship with clubs, members and guests
  6. Report any Maintenance issues through correct channels/ contractors

Finance

  1. Collating and reporting on the profit and loss of every event
  2. Meet with Site Manager to discuss monthly targets, expenditure and income performance against budgets
  3. Deliver against agreed budget targets set such as Gross Profit, number of events and relevant management reports
  4. Ensuring that staff take all opportunities for selling more (upselling) to all customers
  5. Ensure that all financial procedures and controls are followed, and policies implemented and adhered to
  6. Responsible for the safe management of tills and floats and monies received
  7. Develop and drive promotional / seasonal offerings within the bar

 Systems

  1. Ensure the department adherence to spirit, principles, structure and application of the health and Safety Policy
  2. Incorporate and instill the catering standards, systems and policies within the catering Quality Management System (QMS) to the operation
  3. Contribute suggestions to the Catering Manager in developing a robust Catering QMS
  4. Train all relevant employees in the operational aspects of the QMS
  5. Record all documentation required by the QMS
  6. Ensuring weekly maintenance of the department including cellar management (beer line cleaning)

Stock Management

1. Order stock and ensure it is received into secure storage

2. Maintain correct stock levels for operational needs, ensuring wastage is minimised

3. Maintain equipment stock levels to meet operational needs

4. Monitor the performance of suppliers and report repeated shortfalls

5. Complete Monthly stock counts/checks and report to Catering Manager

Administration

  1. Provide documentary evidence for inspection during Site Manager audits as well as visits from Environmental Health Officers and Trading standards
  2. Collate and process delivery notes and invoices promptly and ensure purchase orders are receipted accurately
  3. Participate in any stocktaking process introduced to manage stock levels across the site

Staffing

 

  1. Manage Bar Staff and other catering staff to deliver results against target and in accordance to HR policies and procedures
  2. Assist in the recruitment and management of staffing levels
  3. Managing and producing monthly rotas in line with staffing budgets and needs of the business while maintaining a high level of service
  4. Ensure that all staff understand and comply with current hygiene legislations
  5. Ensure good personal hygiene and presentation standards of the bar team
  6. Assist in maintaining good working relationships with site operational staff within other departments on site and across the Wave group

Event Management & Promotion

  1. Create an event strategy for the site including identifying areas of focus and growth with both Club use and external bookings
  2. Ensuring the planning and execution of relevant, safe, compliant, profitable and well managed events
  3. Collating and reporting on the P and L of all events you put on
  4. Maintaining a positive working relationship with Clubs, members and customers
  5. Ensure excellent customer care and experience in line with Wave policies at all events
  6. Delegating event planning tasks to other staff members where necessary
  7. In the absence of the Site Manager responsibility for taking clients and customers on site tours demonstrating to clients and customers a strong knowledge of the venue
  8. Managing and overseeing events on the day, including problem-solving, welcoming guests, directing event set-up and organising all aspects of delivery
  9. Communicating with marketing team to create effective advertisements for each event, and when necessary crafting marketing materials such as print and Internet advertisements for individual events
  10. Creating sales opportunities for future events during client liaisons and during events, including possessing a strong working knowledge of the company to further these sales opportunities
