About Leonardslee Lakes and Garden

Looking for an enchanted and wondrous place to visit in West Sussex? Satisfy your heart with the lavish scenes and beauty of the Leonardslee House & Gardens.

This Sussex attraction was built in 1801 with breathtaking views of the English countryside and blooming displays of Rhododendrons, Azaleas, Camellias, Magnolias and Bluebells. A 19th-century Italianate style house is featured on the 200 acre estate, which also includes a series of seven man-made ponds, two alpine glasshouses and an impressive rock garden which was built 1890 by the well-known Victorian landscaping company James Pulham and Son. The Garden

Englands finest woodland gardens: in the Spring a kaleidoscope of colour sweeps through the gardens, listed as Grade I in the English Heritage Register of Parks and Gardens of Special Historic Interest. The estate is set in a steep-sided valley, with seven lakes and a unique combination of woodland forest, rock garden and parkland, with a rare colony of wallabies and a number of deer species that roam throughout the estate.

The rich flora in the garden was planted by Sir Edmund Loder, a pioneering Victorian collector. The plantation included a unique collection of Rhododendrons and Azaleas and many species of trees giving the garden its renowned reputation.

Restaurants & Tearooms Leonardslee Gardens features a range of locations where you can enjoy a selection of food and refreshments during opening times throughout the year, after we open in 2019.

We will be announcing the full range of on-site facilities that will be available closer to the opening date. You can be sure that you can enjoy hospitality of the same high standards, choice and convenience that is available at Mannings Heath Golf Club and Wine Estate, our sister estate at Horsham.

Restaurant Interlude

Join Chef Jean and his team for a dining experience that will bring our 240 acre woodland estate to your table. Menus are designed around produce grown, found and foraged from our estate and is ever changing like the gardens themselves. If we couldn't source the produce from the estate, we use produce from local farmers who all share the same organic principles.

We are looking for a keen, passionate and friendly applicant to become part of our team as an Apprentice Commis Chef. The successful applicant will be working alongside a dedicated team of chefs cleaning, prepping cooking and producing fine foods. With fine and seasonal ingredients and produce, including the unique experience of using produce grown, found and foraged from the estate. If they are keen to learn then we have much to teach.

As an Apprentice Commis Chef you're on the first rung of the ladder to becoming a great chef.

In most kitchens you'll do food preparation work and basic cooking under the supervision of a Chef de Partie or Section Chef, rotating through sections such as sauce, vegetables, fish and butchery roughly every six months.

This is your big chance to learn all there is to know about your trade, but the standard and style of cooking you do will be determined by your commitment and the type of hotel or restaurant you gain experience in.

Key responsibilities:

  • Maintaining high standards of hygiene
  • Preparing the ingredients for a more senior chef
  • Measuring dish ingredients and portion sizes accurately
  • Dealing with deliveries and stock rotation

There will be the opportunity as an Apprentice Commis Chef to assist on a variety of events; high end corporate events, weddings and parties being just a few examples.

There is the opportunity for progression from Apprentice Commis Chef within the organisation if you possess and display the required skills and qualities for the roles in question.

Site is not near to public transport. Own form of transportation would be advantageous.

Training to be Provided:

A commis chef is the most common starting position in many kitchens and in principal the most junior culinary role. A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. Therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired. The learning journey of any chef will vary considerably from one individual to the next; however it is necessary to understand and have experience in the basics that this role provides in order to progress to any future senior chef role.

Please be advised that training is completed at Crawley College.

18 Months

Other Important Information:

All applications must be made through Apprenticeship vacancies. Do not contact the employer direct as this may result in your application not being considered. The National Minimum Wage for Apprentices is £3.90 per hour effective from 1st April 2018. This is the legal minimum pay per hour applying to 16-18 year old apprentices and those aged 19 and over in the first year of their apprenticeship. For apprentices 19 or over who have completed their first year and are continuing their apprenticeship, the National Minimum wage appropriate to their age applies.
