Mannings Heath Golf & Wine Estate in West Sussex, England is part of the Benguela Collection, which consists of Leonardslee House & Gardens, Lower Beeding, West Sussex, England, Benguela Cove Wine Estate in Walker Bay, Hermanus, Western Cape, Nom Nom an eaterie and wine bar in Somerset West, Western Cape, South Africa and Lakeside Lodge & Spa, a small boutique 5-star hotel that is located in the garden route, South Africa.
The Benguela Collection is owned and operated by Zimbabwean born entrepreneur, Penny Streeter OBE and her family. The terroir in West Sussex is similar to the terroir in Champagne, France and the family aim to erect a new cellar on the 500-acre site and produce a premium English sparkling wine. The wines from Benguela Cove are sold at Mannings Heath and with wines from both the northern and southern hemisphere on the cards, as well as passionate team of winemakers and ambassadors the Benguela brand is set to grow.

We are looking for a keen, passionate and friendly applicant to become part of our team as an apprentice commis chef. The successful applicant will be working alongside a dedicated team of chefs cleaning, prepping cooking and producing fine foods. With fine and seasonal ingredients and produce. If they are keen to learn then we have much to teach.
As an apprentice commis chef you're on the first rung of the ladder to becoming a great chef. In most kitchens you'll do food preparation work and basic cooking under the supervision of a chef de partie or section chef, rotating through sections such as sauce, vegetables, fish and butchery roughly every six months.
This is your big chance to learn all there is to know about your trade, but the standard and style of cooking you do will be determined by your commitment and the type of hotel or restaurant you gain experience in.
Key responsibilities:
- Maintaining high standards of hygiene
- Preparing the ingredients for a more senior chef
- Measuring dish ingredients and portion sizes accurately
- Dealing with deliveries and stock rotation
Training to be Provided:
A commis chef is the most common starting position in many kitchens and in principal the most junior culinary role. A commis chef prepares food and carries out basic cooking tasks under the supervision of a more senior chef. The primary objective of the commis chef is to learn and understand how to carry out the basic functions in every section of the kitchen. Therefore having the opportunity to experience, consider and value each section with a view to choosing an area where they feel most inspired. The learning journey of any chef will vary considerably from one individual to the next; however it is necessary to understand and have experience in the basics that this role provides in order to progress to any future senior chef role.

18-24 Months

NVQ2-BTEc level 1 hospitality and Catering (preferable)

The National Minimum Wage for Apprentices is £3.90 per hour effective from 1st April 2018. This is the legal minimum pay per hour applying to 16-18 year old apprentices and those aged 19 and over in the first year of their apprenticeship. For apprentices 19 or over who have completed their first year and are continuing their apprenticeship, the National Minimum wage appropriate to their age applies.

Site is in Horsham, not near to public transport. Own form of transportation would be a bonus. Short bike ride from Horsham town.
