The Copthorne Hotel London Gatwick is seeking a Senior Sous Chef to assist the Head Chef to lead and organise the Kitchen team to maintain the highest standards required.

As Senior Sous Chef key responsibilities include:
  • To supervise, direct and participate where necessary in the preparation and cooking of all food items.
  • To ensure that all purchasing is placed with the Head Chef.
  • To receive stock checking thoroughly for quantity and quality, to report to the Head Chef any substandard items.
  • To ensure an efficient system for storage of all food items received.
  • To prepare dish specifications for all menu items enabling accurate costing to be made by the F&B Cost Controller, ensuring food cost percentages are adhered to, monitor price fluctuations and react accordingly.
  • To keep all food wastage to a minimum and report all wastage to the Head Chef.

Staff and Training
  • To meet the standards of training required by the hotel and the Head Chef.
  • To assist in the effective development and training of all staff within the department, ensuring each member of staff has a current training programme to ensure satisfactory standards and that training records are up to date.
  • To assist in implementing the departmental induction for all new staff to ensure that each new employee starts in the best conditions possible.
  • To conduct departmental performance reviews as required.
  • To organise monthly meetings with all Sous Chefs and Head Chef to discuss training issues and progress.

Safety/Health and Hygiene
  • To report to the Head Chef or management any defects or damage to equipment.
  • To ensure at all times safety precautions and fire prevention are observed, and if needed reported to the Head Chef or management.
  • To ensure that the Health and Safety standards laid down by the hotel are maintained at all times.
  • Ensure that the Kitchen and all working areas are maintained at the highest standard of cleanliness and hygiene at all times.
  • To be aware of HACCAP procedures.
