Multi-award winning independently owned gastro pub in Ditchling. Our venue offers two bars, two private dining spaces and a beautiful dining room along with a state-of-the-art kitchen serving modern British recipes, six stylish hotel rooms and our own brewery. Outside our large tranquil garden offers an additional bar and outside kitchen facility.

Apprenticeship summary

We are seeking a confident individual with a passion for food to join our kitchen brigade. You will be supported by an experienced and talented team, fantastic systems and some of the most amazing suppliers. We are a busy site producing all our own menus from freshly sourced local ingredients, including our own kitchen garden. All chefs in our kitchen are expected to be involved in designing, developing and creating new dishes. Our high company standards must be met at all times, ensuring that recipes are followed, and dish specifications are met every time.  

Duties/responsibilities will include:

  • Maintain excellent standards of personal, food and kitchen hygiene
  • Ensure compliance to procedures, menu specifications and recipes
  • Produce food meeting portion controls, and budgetary constraints
  • Be diligent in safe and hygienic working practises

You will be expected to assist with meeting our company food GP target of 72%. This role will require you to be organised and have the ability to follow lists and prioritise. At busy and peak times, you will be required to work at a fast pace. You will be expected to meet company and statutory health and safety requirements at all times.

Desired qualifications

GCSE's maths and English Grades (4-9) or (A*-C) or equivalent qualifications accepted.

Future prospects

If taking NVQ Level 2, moving on to NVQ Level 3 and becoming a permanent member of staff.

Things to consider

Apprentices are paid for their normal working hours and training that's part of their apprenticeship (usually one day per week).

Weekly wage - £157.50

Working week - Varied start and finish times between 7am - 10pm, Varied days Monday-Sunday. Including 1-hour lunch break. 35 hours, up to 48 working hours. All worked hours will be paid. Shifts TBC.

Total hours per week - 35.00

Expected duration - 18 months

Possible start date - 07 May 2021

Apprenticeship level - Intermediate Level 2 (GCSE)
